Layout Fundamentals

The Five Commercial Kitchen Layouts

Most commercial kitchen layouts follow one of five patterns: assembly line, island, zone, galley, or open. The right one depends on your menu, your volume, and the shape of your space. We usually blend two of them, then prove the flow on paper before anything gets ordered.

Assembly Line

Stations in a straight production sequence. The workhorse for high-volume, repeatable menus: pizza, fast casual, ghost kitchen delivery lines.

Island

Cooking equipment grouped on a central block with prep and storage on the perimeter. Strong for large kitchens where a chef supervises from the middle.

Zone

Separate stations for prep, cooking, plating, and warewashing. Suits varied menus and larger operations like hotels and cafeterias.

Galley

Two parallel runs with a working aisle between. The efficient answer for tight footprints, food trucks, and narrow lease spaces.

Do you design kitchens outside Dallas–Fort Worth?
Yes. Design work travels well: we work from your plans and site measurements for projects anywhere in the country, and we ship equipment and custom stainless nationwide from our Garland, TX facility. DFW projects also get our own installation crew on site.
How is this different from your restaurant design service?
Commercial kitchen design covers the back of house: workflow, equipment, utilities, and ventilation. Our restaurant design service covers the entire space, including the dining room, bar, branding, and finishes. Many clients use both, with one team carrying the project from concept through opening.
